Easy, healthful and low fat boneless chicken breasts roasted in an Asian style home made plum sauce. Serve with steamed rice or pilaf and a spinach salad or roasted vegetables ... mmmm. Great all year 'round.

Ingredients

4 boneless skinless chicken breasts

Plum Sauce
2 cups fresh plums, pitted and diced
½ cup brown sugar, firmly packed OR ½ Maple Syrup
2 tsp. lemon juice
1 tsp. cornstarch
1 tsp. ground ginger
2 Tbsp. soy sauce
1 Tbsp. plum or apple jelly
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. pepper

Preparation:

For best flavor, prepare the plum sauce a day ahead of time. Refrigerate until you're ready to bake the chicken breasts. You can also make the sauce just before baking the chicken.

Preheat oven to 375 (350 if you're using a ceramic or glass baking dish.)

In a medium sized mixing bowl, combine plums, plum jelly, cornstarch, and soy sauce. This with a slight amount of water (1/2 tsp at a time) if sauce seems too thick.

Stir in brown sugar. Add lemon juice and ginger. Mix well by hand. Add garlic powder, onion powder, and black pepper and stir until smooth.

Wash and pat dry chicken breasts. Coat each breast with plum sauce by dipping into sauce and turning over, then arrange breasts in non-stick or lightly oiled baking dish. Spoon remaining plum sauce over chicken.

Bake for 25-30 minutes.

Serves 4.
